Create a perfect crepe with this go-to recipe, complete with a classic lemon and sugar combination – so simple, yet so delicious!
(Makes 12 zesty pancakes)
Ingredients
1) Place the flour, eggs, milk and a pinch of salt into a bowl or large jug, then whisk into a smooth batter. Leave the mixture to rest for 30 mins (if you have time).
2) Set a frying pan over a medium heat and carefully wipe it with some oiled kitchen paper. When hot, poor some batter into the centre of the pan and carefully tilt the pan so that the mixture covers the whole surface. Cook for 1 min on each side until golden, keeping your cooked pancakes warm in a low-heat oven as you go.

Let the second side cook for a minute before serving.
